Fortina chocolates are stone ground, artisan-hand crafted using raw, organic, fair-trade ingredients of only the highest quality available. Live “raw” low heat processing techniques preserve the delicate nutrients and beneficial compounds - cacao bean to bar. All chocolate bars are tempered by hand, working with the fat crystals that are present within cacao, reforming and reorganizing them. This brings the newly formed crystals together into a tight geometric crystalline structure. As the cacao cools this newly formed structure contracts giving finished chocolate confections its snap and shine. Dark : The intensity of nature abounds in this seriously rich chocolate. From the initial expressions of dark roasted espresso and coffee, dried raspberries, cranberries, and black currants peek out for a moment before the earthy flavors of soil, black truffles and cacao come into sharp focus.
